Dear Listmates, It may be getting late to make fruit cake but this is good.
Tropical fruit cake
1 1/2 c pecan halves
1 1/2 c walnut halves
10 oz package pitted dates (I used an 8 oz package of Amport foods chopped dates which are gf)
4 oz candied pineapple (can use canned pineapple, drained)
1 cup red maraschino cherries, drained
3/4c gf flour
3/4 c sugar
1/2t salt
3 eggs
1 tsp vanilla
Line 2 9" round layer cake pans with foil and grease lightly.Mix all fruit and nuts in large mixing bowl. Mix all dry ingredients and sift over this. Beat eggs, add vanilla and pour over previous mixture. Mix well (with hands). Transfer batter to foil lined pans. Use scraper to get every bit of batter from bowl. Lightly press fruits and nuts into pans to compact the mixture. Bake 1 hour, 15 minutes @ 300 degrees F. Cool on rack and remove from pans. When cool wrap in foil and store in cool place. Cut in
wedges to serve.
