Just wanted to share a recipe from Epicurious for a wonderful mock chocolate
torte that ranks right up there in the world of GF chocolate desserts. The
recipe - which features mashed sweet potatoes as the surprise ingredient --
calls for margarine (because it's meant to be a Passover recipe), but you
can easily substitute unsalted butter if you prefer. I used Valrhona 56%
cacao chocolate, baked it in an 8-inch square pan (lined with parchment) and
skipped the rum extract and glaze. Instead, I dusted it with confectioner's
sugar just before serving and topped it with sliced fresh strawberries. It
was a big hit at our seder. You can find the recipe at
http://tinyurl.com/rvut7. I encourage you to read the reviews for tips about
making the glaze, if you choose to go that route.
