One other component of dried peas and beans that can cause digestive upsets
are the oligosaccharides, which are undigestible sugars. These sugars are
consumed by the bacteria in our gut, which then release--you guessed
it!--GAS! Like some of the other nasty substances mentioned in previous
posts, oligosaccharides are minimized by thorought soaking and cooking. It
is also my understanding that the action of sprouting converts these
undigestible sugars into more digestible carbohydrate forms.
