I had about a dozen responses to my question asking how Josef's Graham Crackers tasted and whether they would work for s'mores. Here are some of the comments:

"I bought them once and am about to place a second order.  I loved  them...My daughter says that they are good, but they don't truly taste like a
graham cracker..."

"They're small -- about 2 inches square -- and thicker than regular graham  crackers, but they taste good..."

Per my 10-year old daughter:  "The graham crackers go very well with s'mores (she has tried them). They are smaller than regular graham crackers...One problem is that they break very easily  because they are soft. They taste VERY GOOD. "

"I like them but they are a bit more spicy then graham  crackers."

"they are good but they do not taste like graham crackers..."

"i like them very much. good graham cracker taste even all by  themselves. they are thicker than the real thing and a bit flakier, but i  would imagine they
would work well for smores."

"taste great, but more like a  ginger/molasses cookie.  somewhat small for smores, but worth a try."

"They're good, just not great eaten dry. I think they would make a fantastic pie crust. if you put marshmallows and chocolate on them they'd probably be
fantastic."

Two people wrote who hadn't tried Josef's Graham Crackers. They said:

"I use the Glutafin, Gluten free biscuits...They are awesome...I use the crackers for smores mostly in the summer when we go camping.. or sometimes
as a different treat for picnics or whatever.  The package is very expensive, but SO worth the money.

"I have not had Josef's graham crackers, but have tried numerous other products from Josef's (bread, bagels and cookies) -- each one has been excellent.  I highly recommend this bakery."

I'd like to thank everyone who gave me feedback on this product. I'd never heard of this company before...but I've gone ahead and  ordered some of their graham crackers and I'm keeping my fingers crossed for the s'mores.
