Microwave oven-fried chicken (from Shirley Hertzberg)
coating ingredients:
1 c crumbs from gluten-free cornflakes or gluten-free bread
1/3 cup grated parmesan cheese (optional)
1 TBS parsley flakes
1 tsp garlic salt
dash pepper
1/3 c butter
2 eggs
2 1/2 - 3 lbs chicken pieces
Combine all coating ingredients in shallow dish or on waxed paper.
Melt butter in shallow microwave-safe dish. Add eggs and beat well.
Dip chicken pieces in egg mixture and then in coating mixture.
Place chicken on microwave-safe dish, with meaty pieces of chicken
to the outside of the dish. Microwave on high 8 to 10 minutes and
then reduce to 10% power for 15 to 18 minutes. Let stand 5 minutes.
