A big tradition for our family has been to make Christmas cookies that we roll out and cut out using cookie cutters and then decorate. My two children are newly diagnosed with celiac disease so I am wondering if this annual ritual must go.

Does anyone have any experience with making gluten-free cookie dough that can be rolled out and cut out? Do you have a workable recipe?
