Cold pressed avocado oil works very well in mayonnaise... not as heavy as olive oil... 

Here in the UK we can get, in most supermarkets, 'Simply Delicious Organic Mayonnaise' made with extra virgin sunflower oil and free range eggs... not sure if you can get it elswhere...
