I don't know the answer to that, but while we're on the subject of tart
cherries, does anyone know of a source for organic, dried, unsweetened
tart cherries? I've been able to find organic ones, but not unsweetened.
I suspect that they retain they're anti-oxidant and anti-inflammatory
properties through cooking, but can't say with any authority.

Does anyone know if the anti-inflammation properties of tart cherries is
destroyed when the cherries are cooked? I ask because Eden has a tart
cherry "butter" product -- only ingredient is tart cherries -- NO added
sweetners, juice etc. It's basically pureed and cooked tart cherries.

put a teaspoonful on my steak last night -- wonderful!
