Oliva... this isn't so curious really :-)... it's about the body's ability to ACTUALLY use all the iron ingested... 

I've been a gluten free vegetarian since 1997 and paleo omnivore since 2000, eating meat every day... still have ferritin deficiency although not as bad as when first detected... it might take longer than desired for the gut to be repaired sufficiently and absorb iron in significant amount to up the ferritin status... my own RLS has been help significantly with magnesium supplements.
