Hi Celiacphiles,
Many have asked for this gluten reaction cure, Joan's Lentil Soup:
Here goes: Use a full package of brown or yellow lentils. Brown an
onion and garlic in a large pot, with olive oil and bay leaf, with a little
bacon or left over meat. Add 2 cans chicken broth ( Health Valley works),
washed off lentils, and cook until tender. Cook butternut squash, cut up in
small pieces and a couple of jewel yams in the microwave. Put the
lentils, squash, yams, lentil mix in a crock pot and cook on low for about
4-6 hours. Yummee. Freeze what is left and use as you want. You can add
other veggies, fold in a little rice, as you want, for variety.
Celiac best,
Susan
