This main dish is an Indian version of a traditional
chili, but just a bit different to make it
interesting. While some may balk at the idea of two
starches competing (the beans vs. the potatoes), they
actually combine to make a hearty new delicious
flavor.This dish doesn't contain any meat (or any
animal products.)
Ingredients:
(Use organic, non-irradiated ingredients, whenever
possible)
# 2 Medium Potatoes, diced very small (about size of a
dime)
# 2 Medium Tomatoes, chopped
# 1 Can 15 oz. (425g) Pinto Beans
# 1/2 Small Onion
# 1/4 Cup Water
# 1 Tbsp. Rice Wine Vinegar
# 1 1/2 tsp. Chili Powder
# 1 tsp. Cumin
# 1 1/2 tsp. Cilantro
# 1 tsp. Sugar
# 1 tsp. Minced Garlic
# 1 1/4 tsp. Paprika
# 4 Tbsp. Ketchup
# 1 tsp. Sea Salt
# 1 Pinch Tumeric
# 1 Pinch Cardamon
# Celery Salt to taste
Directions: In Sauce Pan, on med/low heat, stirring
occasionally, simmer for about 50 minutes with lid on,
and 5 minutes more with lid off if it's too runny (or
until potatoes are cooked.)
That's it. Add 1 tsp. Sea Salt and Celery Salt to
taste after it's done cooking.
Makes about 4 servings.
