For a rundown on the background of this info here are a couple of links explaining where the information originated. A dentist travelled the world back in the '30's, studying isolated cultures and their diets and health and his findings were startling, sobering, and relevant.

These peoples also soaked their grains and seeds for long periods of times. They used sourdoughs to raise them, and one of those sourdoughs is being studied for it's effects on gluten. It's too soon to draw conclusions though. The 11 major differences he found in those cultures dietary customs are enumerated in the second link above this paragraph.
