Get or make some nice pesto and coat the chicken or turkey with that.  I
buy pesto made with olive oil, then either stir-fry or grill some
chicken breast.  I cut bell peppers into strips, spread them on a baking
sheet, sprinkle olive oil and oregano on them, and roast them.  I mix
the cooked chicken with a liberal amount of pesto and serve with the
oil-roasted bell peppers, and it's delicious.
