First, thanks so much to all of you who answered my questions about how to safely eat out and what to do to not gain weight. There were so many responses that I can't print them all but most had the same themes which I have listed below:
On eating out:
It is very difficult to avoid cross-contamination and the safest thing to do is to carry your own food or eat very plain chicken, fish, or meat. I guess I was wishing for a "secret" answer because my husband and I love to eat out.
On weight gain:
Most responses referred to the high caloric content of gf baked goods and to stay away from them. Some talked about the healing process and that more calories are being absorbed after going gf. The bottom line seemed to be that weight gain in a Celiac is the same as weight gain in a "normal" person--more calores in than energy out. I am one of those strange Celiacs who was in very bad shape as far as my villi went but still did not lose weight so I really don't have much room to gain. I'm already exercising daily and watching what I eat but I guess I'll just have to count calores more carefully.
Thanks again to all who wrote and as much as I hate having Celiac, I love being part of a group that has so many caring people who response so willing to any question.
