Two more pieces of information about tonkatsu and hoisin have come in:
here they are - I am not personally recommending and have not verified
any of these, just passing on the information that as it was received:

1)Kagome brand tonkatsu sauce (major brand of sauces in Japan) is gluten
free, according to the company when I asked a couple of weeks ago. Just
joined this listserve;

2)I believe Lee Kum Kee makes a GF Hoisin sauce.
