I came across a rather horrifying comment in the LIVE RIGHT 4 YOUR TYPE book that gums such as guar and xanthum seem to make allergens more potent or more easily absorbed, sorry, the book is at home so I can't quote exactly. But it made me wonder if people who switch from gluten to GF products with these gums could ge jumping from the fat into the fire.
Due to being in a small town where GF products are mostly unavailable, I don't tend to eat a lot of them. Last week though I bought a 4 lb bag of tortillas, I haven't bought tortillas in years, ate them every day and I've had the runs all week. The tortillas had guar gum in them. Donna
