This is not an undocumented, obscure topic. 15-30 million people in the United States alone have Celiac Disease. That's somewhere between the populations of Texas and California. And since Celiac is subset of the larger condition of gluten sensitivity, the actual numbers of those affected by gluten are much, much larger. To say nothing of casein. Cordain and Rosedale should mention it.
