Folks-
I am self-diagnosed celiac and have been gluten-free for three years. (Not ultra-strict- I eat out a lot. Just found hidden gluten in a couple things I had this week- cheesecake at the Cheescake Factory and Imitation Crab at the sushi restaurant.)
My mother was diagnosed as celiac in the 1960s. I have been having more trouble with my gut and plan to get blood-tested for celiac disease to confirm which means an upcoming gluten challenge.
I have read you need to eat four slices of bread for 2 weeks before the blood draw according to a British society for gastroenterology. (Can you say Dunkin' Doughnuts and Papa John's pizza? Beer? How else can I enjoy the gluten challenge while feeling ill?)
Are there any other good sources of information on gluten challenge and the length of time needed to establish the antibodies?
