Part 3, whole-wheat like bread
21. Here are a couple bread recipe with variations. You can try your
own variations.
RICE BREAD
Sift together into bowl:
2 cups rice flour or (1 c. each of rice & millet flour) or (1 c.
bean fl., 1/2 c. rice fl., 1/2 c. buckwheat fl)
1/2 cup sweet rice flour or bean flour or millet flour
2 tsp. sugar (for raisin bread cinnamon , add 1 1/2 tsp.
cinnamon)
1/4 cup potato starch flour or almond flour
1/4 cup tapioca flour or soy flour
1/4 cup ground flax seed (optional)
3 1/2 tsp. Xanthan gum
1 1/2 cups dry milk
1 3/4 tsp. salt
1 tsp. Fleischnann's BreadMachine yeast (I know a teaspoon
doesn't sound like much yeast but it works.)
Stir in:
1/4 cup unpacked brown sugar
Mix together and pour into bread machine pan:
2 large eggs plus 1 egg white
1/4 cup canola oil
1 3/4 cups warm (120º) water
Very lightly spoon dry mixture on top of liquids
Place pan in bread machine and turn on (for cinnamon raisin bread,
add 1/2 cup after 1st kneading or when bread machine suggests to add)
I use a Breadman Plus bread machine on rapid white setting set for 2
lbs. dark crust
Pumpernickel Bread
Sift into bowl:
2 cups brown rice flour (or combination of above flours)
1 1/2 tsp. salt
1/3 cup tapioca starch flour or almond flour
1/2 cup dry milk
2/ cup potato starch flour
1 TBS. cocoa
2 1/2 tsp xanthan gum
3 TBS. sugar
1 TBS. caraway seeds
1 tsp. yeast
Combine and put in bread pan:
1 1/2 cups + 1 TBS. water
1 tsp, vinegar
3 TBS. molasses
2 TBS. canola oil
3 eggs plus 1 egg white beaten lightly
Put liquids in bread pan
Lightly spoon in dry ingredients
Use same setting on bread machine as above except for med. crust
