Camper's Biscuits

 

When camping, cooking gluten free is a challenge as this diet rules out so many easy, prepared foods.  Here is a recipe you can make ahead and add the liquid when you are ready to cook.  Not only are you looking for quick and easy but you want some nutritional value as the kids are so active when out in the woods.

 

4 cups Ruby Range Basic Mix

1 teaspoon salt

1 Tablespoon baking soda

1 teaspoon cream of tartar

1 teaspoon sugar

1 cup Spectrum Shortening (this is a non hydrogenated palm kernel oil product and is actually healthy, hydrogenated oils are a leading cause of disease and should not be used by celiacs or anyone else in the family)

3/4 cups non-fat powdered milk

 

Mix dry ingredients.  Cut in Spectrum Shortening until it looks like coarse crumbs.

Pack in a jar or heavy plastic bag.  Before baking add 1/4 - 1/2 cup of water for each 2 cups of the mix used.  Mix well.  Drop one biscuit at a time on a slightly oiled camping skillet.  Cover and cook until done.
