I tried two recipes today with instant yeast (as opposed to active dry
yeast) and was amazed at the difference!  A tip sheet I got with the bread
machine recommended the instant yeast, particularly with whole wheat and
other whole grain flours.  It definitely leavens betters and creates a
higher, lighter loaf.
