Baked  Pancake

 

 The original recipe for these pancakes came out of a kids cookbook 30 years ago and the family has always loved them.  It is similar to the German apple pancakes but easier to make and my kids and grand kids have always prefered them.

 

 2 - 4 Tablespoons butter

1 / 2 cup Ruby Range Pancake Mix

a pinch of cinnamon

1 / 2 cup low fat milk

2 eggs

optional: 1 cup sliced fruit

1 teaspoon sugar or honey

juice of one lemon

 

 Preheat oven to 425°.

Put 2 - 4 tablespoons butter in a 10 - 12 inch oven proof skillet.  Melt butter in the oven.

 

 Meanwhile in a bowl mix 1 / 2 cup Ruby Range Pancake Mix,

a pinch of cinnamon, 1 / 2 cup low fat milk, 2 eggs and optional fruit.

mixed in, but leave some lumps in the batter.   If you want, you can stir in some fruit - blueberries, raspberries, apples etc.

 

 Pour the batter into the pan with melted butter.  Bake 15 - 20 minutes until golden brown.

 

 Take out, sprinkle sugar or drizzle on a little honey.  Put back in the oven for 5 minutes.

 

 Take the pancake out and pour lemon juice over.
