Several of you have replied positively about the SF Chronicle
articles. Another post from Maureen (5/11) pointed out the article
and the link again. Maureen sent the article link and comments to
her elected representatives in Congress. She urged us to do the same.
About the Pasta Evaluation, Taster's Choice: Gluten-free pasta earns
Hall of Fame honors. When I wrote to the author, Carol Ness, I asked
about the testing panel--did any of them have celiac disease. I was
impressed to learn that the panel was the regular food panel.
Carol's response included her comments about doing the article as
well as answering my question about the evaluation panel follows:
I learned a lot doing this story - starting with the fact
that celiac disease is so common. I also didn't know how hard it is
to avoid gluten. People who deal with this daily have my total
respect. About the tasting panel - it was our regular panel. They
knew the pastas were gluten free, but evaluated them entirely on
taste, texture and appearance. We wanted to know what is really good,
not just "what's good for a gluten-free item."
I really appreciated the fact that the evaluation was done to
identify "what is really good" and as she said, "not just what's good
for a gluten-free item." Three cheers for Tinyada Pasta. Their
pastas are my favorite and also the favorite of my fellow local
support group members.
