When pressed for a quick dessert I make a dump cake.
Cherry-Pineapple Dump Cake
1 20-oz can crushed pineapple, undrained
1 can cherry pie filling
1 18 oz package yellow cake mix
1 stick melted butter or margarine
1/2 cup broken pecans
Spread crushed pineapple on bottom of a lightly oiled 13 x 9 pan. Top with
cherry pie filling - don't mix with pineapple. Sprinkle cake mix even over
fruit. Drizzle with melted butter and sprinkle with chopped pecans.
Bake at 350 for 50 - 60 minutes or until golden and bubbly.
I didn't have a cake mix that size so mixed the one I had with part of a
scone mix and it turned out great. Blueberry or apple canned pie filling can be
substituted.
