Actually, you should only require about a pound of beef fat per eye of
round.  If you have liquid fat left over, decant it into a smaller
container.  You can use it for baking, frying, slow-cooking, or just
eating -- the way I used to use ghee.   I keep mine in the fridge.
It'll last a few months.
