I am very happy to have found these Pamela's espresso cookies! Does anyone have
a recipe that makes a crunchy GF cookie like these? My son says that the rice
based baked goods seem to be like the black-hole of baking, in that all flavors
disappear into them, leaving a bland and relatively unsatisfying treat, but
these Pamela's espresso cookies are quite tasty.
Thanks for any recipes that people send - I will summarize all and send back to
the list. Only interested in crunchy flavorful cookies with structural integrity!
