Greens, glorious Greens is my all time favorite cook book. I've not
had a single flop from this book. I make changes to the recipes
because I water saute and don't use salt. Also, I don't like mustard
greens so if a recipe calls for mustard greens I use kale.

Again, I amend for salt and oil. My kids love the Black Bean
brownie recipe from this book. I add a cup of chocolate chips which
makes it gooier.

there is nothing healthy about the recipes in this book, but oh, my
goodness, he has some great "ice cream" recipes.
I tend to stick to sorbets and make one most nights for dinner.
They are a synch if you have a strong blender like a VitaMix.
My basic recipe is:
- I rehydrate 2 or 3 pieces of unsugared, sulphur free dried
pineapple in a bit of non dairy milk, water or fruit juice (I use
whichever I have on hand)
- Now I blend this mixture with a banana till everything is smooth.
- Then I add frozen fruit of my choice, using the tamper to push down
the frozen fruit.
You end up with a "soft serve" type sorbet.
Black cherry and blue berry makes a wonderful combo. otherwise
strawberry or mango on their own make great sorbets as well.
When I am making it just for my children I add some raw cashews to
the banana mixture and blend until they are well pureed. That adds
some good fats to the mix and gives it an even smoother mouthfeel.
I make a topping for deserts by mixing equal quantities of a non
dairy milk, raw cashews and raisins (Half as much as the nuts). THen
blend until well smooth and refrigerate. It is very, very good,
especially on baked apples.
