Thanks for the great tip on caramel, I worked in a bakery where they did this trick to make caramel, and It's really good, but there is a warning that needs to go with it.  Because of this, I am also sending this post to the list

Keep the water level very well above the top of the can, or the cans will explode, and did once in the bakery where I worked when someone forgot and let the water level get too low.  Very dangerous and messy!

Its best to take the largest heavy pot you have and put in 6 or 8 cans at a time on the bottom, then fill the pot with water to near the top, and keep the lid on to slow evaporation.  Boil for 3 hours as you said, (without the labels), and keep checking and adding hot water to account for evaporatation.  Allow cans to cool before removing from the pot of water.  The cooking time determines the strength of the caramel flavor and it is possible to overdo it so don't go over the time.

The cans can be festively wrapped and given as small hostess gifts or stocking stuffers during the holidays.

Aldi's carries sweetened condensed milk during the holidays for under $1.00, but WARNING!  I do not have a can to check the ingredients so check to be sure it is actually gluten free.
