i just tried this mung bean pasta from Eden foods - it's pretty good and
it's just pure
mung bean. it cooks in only 4 minutes and it says gluten free on the
back of
the package.  i've been looking for a pasta substitute that doesn't have
any
starchy carbs.  i tried it tonight with fish and so far, no reactions.
it has a very
wierd glass-like appearance.
