The overwhelming response to my query was that I should be careful about
baking wheat challah in my kitchen. That if I felt I really had to, I should
wear an allergy mask to stop from breathing the flying flour and to makes
sure that I cleaned all surfaces and utensils well after baking.
I have come up with an elegant solution. A girlfriend is going to bake wheat
challah with her daughters and my daughter every Friday morning. Since she
bakes 8-12 loaves for Shabbat each week she is more than happy to make
another two loaves for us and teach the skill to my daughter at the same
time. I will then just bake my GF challah each week.
