Hi Folks,
     I am very new to the list.  I have been using a smoker for the last
couple of years.  They are very easy to use and any brand will do.  Simply
fill the bottom with charcoal and light it.  When the coals are turning white
add the top section.  Place the large bowl provided with the smoker  in  it
over the coals (there are little metal pieces which hold it in place about 8
inches or more above the coals).  Fill this bowl with water (you can also use
beer or apple juice).  Next add the rack and add your meat.  Soak some wood
chips (hickory or mesquite) or chunks and every once in awhile you open the
door and throw a handful in onto the charcoal.  This will cause a lot of
smoke and adds flavor to the meat.  Depending on the size of the meat and the
outside temperature you will have to play by ear how long to cook the meat or
use a thermometer.  If you are cooking a beef roast don't bother buying
expensive meat.  The cheap cut will taste just fine.  Meat always comes out
