The claim from "health-food muppets" that spelt is OK for celiacs is an outright LIE!!! They have their little agenda pushing "more natural", "untampered with" foodstuffs as inherently healthy, you know. The reason modern wheat was developed from spelt, emmer, kamut and other early wheat varieties was neither the properties (they ARE the same) nor the amount (that is the difference between classic wheat - including spelt - and durum-wheat) of protein, but that there were problems when it came to harvesting (in the case of spelt, I believe the problem is the grains are hard to get out of the ear). Modern wheat is a classic case of neoteny. I believe "Neanderthin" mentions something about this.
On another note, oats is to be considered gluten free. The protein contained is too different from gluten to cause trouble for celiacs. Not that it's paleo, though.
