I just saw the message where someone stated that malt vinegar has to be made
from barley. I am sure that is true in 99.9% of the cases. For those of you
really missing malt vinegar to use on things like breaded fish, I have an
expensive solution. Several years ago, I was looking through a catalog from Gold
Mine Natural Food Co. from San Diego, CA. They listed a malt vinegar made
from rice. I talked to them to make sure that rice was the only ingredient. I
get the impression that the word malt means more of a process to produce the
product. However, barley is almost always used in the process. Anyway, if one
is willing to spend almost $10 for a 16 oz bottle of rice malt vinegar, you
can get it. I just ordered three bottles yesterday because I got alarmed when
their last catalog did not list the product. They said the printer messed up
and they still carry this vinegar. www.goldminenaturalfood.com and (800)
