Throat closing up is NOT repeat NOT a symptom of celiac disease, it is a histamine-type allergy, such as the common deadly allergy to peanuts.  This is a medical emergency to be treated with antihistamines/adrenaline etc. I've certainly never heard of steroids being used for it, but I'm not a Dr.

No, this is not mouth ulcers.  Back before paleo (and occasionally when I cheat), I have always been tormented by frequent apthous ulcers.  Half my life, in fact, I've had at least one in my mouth.  Sometimes so many that I couldn't go to school or work.  But this is not the same.  They're whitish areas everywhere in my mouth (except for my palate) and in my throat.  I had long concluded that it was a form of thrush or candida but my new doctor yesterday dismissed that immediately.  Said that thrush has white threads that extend from the lesions.  It's an allergic reaction all right.  Here's what happened.

I was hung over from having too much wine on Sunday night, had a mild cold, was physically exhausted and stressed from work, school (working on my Masters), and a couple of other issues in my life right now.  Monday night I am hungry, so I fry up a couple of Eggland's Best Free Range eggs that my lovely wife had just purchased that afternoon.  (Never had this brand before).  Almost immediately, I have a dull but quite obvious reaction to them felt in my mouth and throat.  Next morning, I have these whitish patches in my mouth.

Lynnet > Do you have intestinal symptoms, very-itchy rash, headache, depression?  All common symptoms of celiac disease. 

Again, I've been paleo -- and therefore gluten free -- since 1999.  Yes, I used to have severe intestinal symptoms: bloating, distension, gas, etc.  As a child, I would frequently have to lie down on the couch during dinner because of severe intestinal pain.  Depression yes.  Skin problems, yes.

It was wine, something I love but has brought me more pain that pleasure.  I'll keep my cellar and only drink it on special occasions such as Thanksgiving and Christmas.

Lynnet > N-Acetyl-Glucosamine (called N-A-G) is a supplement that latches onto the gliadin protein and ushers it out of the system so it doesn't cause problems.  It can make celiacs less responsive to accidental small ingestions of gluten.  That doesn't mean you can eat bread and pasta, but will help you avoid big flareups from tiny amounts.  I take it daily.

Excellent.  I will take a look at it.

Lynnet >  Is it possible that you have some other autoimmune problem complicating this, such as lupus, RA, etc.? (there is a long list)  The symptoms, diagnosis, and prescription don't seem to have much in common. IMHO a second opinion is a good idea here.

Here's what I know.  Eating gluten containing grains really screws me up.  I don't usually have such a dramatic response as this one, but my joint pain, frequent apthous ulcers, inattention, depression, seasonal allergies, aforementioned intestinal problems disappear when I avoid the stuff.  I had a doctor yesterday tell me that I have celiac sprue, something that I believe is only diagnosed with certainty after the intestinal biopsy several have mentioned.  But does it really matter whether my obvious gluten sensitivity is manifested as a problem with my intestinal villi rather than showing up in other areas?  I just need to avoid the stuff like the plague.  Most especially when I'm tired, stressed, ill, etc.
