It depends both on personal priorities and on being more calculating when shopping... I live in the UK but the principles should be the same...

Been to the supermarket today... wanted some organic, grass-fed lamb's leg-steaks... they had some  cut and packed ... the price for a half a leg, on the bone, was about half of the prepared steaks so I bought that... will bone the leg myself and end up having more meat for a lot less and the bone could go into the stock pot... 

Prices at Farmers' markets go down at the end of the day, so it's cheaper to stuff my... also go for cheaper cuts and offal too... dig out old fashioned traditional recipes for those cuts.... make your own pates and confits etc.
