The theory behind the 'allergic/immune' response is that the gut has
become permeable to 'foreign' stuff (not just proteins by the way, my
daughter mounts an immune response to sugar) -- the 'leaky gut'
syndrome. That's how the foreign stuff gets into the body instead of
being properly metabolized into constituent parts (monoglycerides, amino
acids, etc. )and once in the body sees the stuff as 'non-self.'
Generally speaking if a person stays completely away from the offending
food for at least three months, the gut gets a chance to heal and then
the person can often eat some of the food occasionally. The grains are
suspected of often being the culprit in the original 'leaky gut' as well
as sugar and other simple carbs, which tends to really throw off the
normal flora protection.
