Ennyhoo, it's been a long time, but I've made my own almond milk by putting
water and raw almond meal (a.k.a. almond flour) in the blender and straining
the end result. I then spread what's left would you call it pulp?) into a
baking dish and put it in the oven on 'warm' 'til dry. THIS seems like
almond flour to me, not ground almonds, which are very heavy. I wonder if
this would bond with the egg and be light enough to give the effect of bread
crumbs.
About 20 years ago I ended up in the hospital with serious diabetic ulcers on
my left foot. Serious enough that they thought that they might have to
amputate. I had been a diabetic for 15 years following the ADA "teachings".I decided
that I had better take this diabetes seriously and started my journey for
control. Blood glucose monitoring machines had just been introduced for patient
use so I started a study of foods vs. BG levels. I also started a basic study
of nutrition through the library and book stores. I arrived eventually at a low
carb , moderate protein and fat diet regimen but I also decided that
processed foods were bad for us. I excluded dairy products since they were not created
for mature mammal consumption. Grains were also eliminated as the evidence
was against human consumption.
Well, I ended up with a healthy, adequate and satisfying diet using only the
foods that are naturally supplied for us. This is where I become confused. Why
are you looking for replacements for the "bad" processed foods? Forget bread,
milk, potatoes, pasta, pizza etc. Why find substitutes? In a short time you
will no longer crave these items if you put them out of your life's
completely. Am I being unrealistic to think that you can do it if you really want to?
