One thing that comes to mind when considering this issue,
is that I read somewhere that it can be very bad for
people with celiac disease to "alternate" between a
gluten-free diet and then relapsing into a regular diet.
So it may be that when we eat something on a regular
basis, we get "used" to it, but then when abstaining for a
while, lose that "resistance." Although I'm not on a 100%
paleo diet, I have noticed that things that didn't use to
bother me very much, like real sweet things or coffee,
seem to have a much worse effect. But I'm not really sure
if it's really that they make me feel worse, or simply
that I always used to feel that way and so didn't notice
the difference!
