I had a whole can of Kame brand coconut milk last night. I had some GI distress, but I attributed it to the two Tbsp. panaeng curry paste that I added to the coconut milk when I cooked it ;-) This usually happens to me, but I love curry too much to give it up. It never occured to me that the coconut milk might be a factor... this calls for some experimentation. I'll let you know if I learn anything.
