Thank you so much for your thoughtful reply.

That makes sense of the fact that we seemed to do very well eating the
[non-paleo] Ezekiel 4:9 bread I find in health food stores, even though we
seem to have gluten issues here. We're not eating it right now though.

I have seen recipes for essene bread in raw cookbooks (isn't that an
oxymoron?) but I have never devoted the time to trying to make it.
