My Swedish "paleo-guru" Staffan Lindeberg (who also is a bit on the conservative side) says 2 eggs a day are OK, so I try to keep that as an average. There ARE some reasons for not overeating on eggs, but if you worry about cholesterol, that's not one of them: Uffe Ravnskov (swe-danish MD) did a test, where his cholestrol levels actually went down as his egg consumption went up from 1 to 8 a day. It's not an atypical reaction... and you could always uncure your bacon. Buy Ray Audette's "Neanderthin" and find out! It's way better than Cordain's book.
