About two days of low carb.  If I add many carbs to my diet and get out of ketosis, the bar takes on that "mushy" and unappetizing quality you describe.  This is due to the body's way of preferring carbs when they're available. In nature mere fat and protein aren't desirable when you've got a fruit tree nearby with its limbs bent nearly to to ground.

It's really strange, though, that when I get back into ketosis, I think the damned pemmican bars are filet mignon with horseradish and a glass of
Chateau Petrus.

The body is fascinating.
