As you know, Im a low carber and celiac. Of course, now I call every company
prior to consumption of packaged foods. However, I have been told via phone
and have found on various GF lists (like Trader Joes and others) this
product called Malitol in foods declared GF. According to Ruth Winter MS
book: A consumers dictionary of Food Additives, "Malitol and Malitol Syrup"
A hydrogenate from maltose...."Maltose" Malt sugar. This reference book
does not say whether the maltose is usually from barley or what grain it
would be made from. It would not necessarily be a good book to identify GF
additives but when needing to know something about the additives in food it
can be helpful. I have searched Shelly Case's book (GF diet) and if it is
mentioned, I cannot find it. The internet cites this is usually
made from
barley.
I really dont know what to believe. However, after consuming anything with
this suspect ingredient, my DH symptoms escalate. Perhaps I am experiencing
cross-contamination problems. Your help would be appreciated.
