Thanks to Ann Sokolowski for advising us that cornstarch can be substituted
cup for cup for cake flour, no gums needed.
Arrowroot starch can be substituted for corn starch cup for cup. My
question is: Can arrowroot starch be substituted cup for cup for cake
flour in a recipe, no gums needed?
I am very sensitive to all grains and a lot of seeds. I am intolerant of
the gums, too. Arrowroot starch seems to be safe for me, but recipes using
it are hard to come by.
Is there anyone else on this list who is also grain-free and gums-free, who
has figured out how to do simple baking with arrowroot starch? I would
appreciate hearing from you with any information you care to share.
