Hi everyone,

Here is the summary for the GFCF cheese... alas, nothing too earth shattering or
surprising.

People suggest I use:

Soymage is GFCF but does not melt.
Goat or Sheep cheese are fine according to several who have tired and some who
are very sensitive to casein.
Rice cheese - no brand name, but the rice cheese in the Whole Foods near me is
not CF - so if someone could shed light on which rice cheese is CF that would
great.

Quite a few people suggested Tofutti however when I wrote the company they could
NOT guarantee their products were completely GF due to cross contamination.
Apparently, all the Tofutti products are made in the same facility.

Thanks for all who replied! Sorry for the delay in this summary but life took
over! I guess my quest for a GFCF cheese that is like the "real" thing has lead
me to goat and sheep cheese. Hopefully they will become my new comfort foods!
