Someone emailed me [thanks!] to say that some brands of both fish sauce and worchestershire sauce may contain gluten, so reading the labels is important. I was unaware of that, since I'm allergic to some kinds of fish/seafood and don't use either of those products myself.
I had good stir-fry success with sesame oil and just a tiny bit of molasses. I put in a tbsp of orange juice too, which gave it a little perk.
