I must admit to all of you that I have been a very stubborn celiac!  It has been almost 2 years ago that I was diagnosed with CS and I have not had bread in any way, shape or form.  I had told myself that if I can't have the real thing, I won't settle for anything "substandard" like some of the "faux" breads on the market.  Shame on me. 

My husband and I just stopped at the O'Naturals restaurant in Portland, Maine where we live.  I ordered my usual Teriyaki Chicken TBM sandwich emphasizing NO FLATBREAD!  I went through the song and dance of " I must have GF food, please make sure there are no errors in my order that could contain gluten".  A very pleasant girl behind the counter said "we have rice bread if you would like that instead".  I told her thanks anyway, but that I really just wanted it plain.  She then told me "there's another girl here who likes it better than the regular bread and she can eat any of it". They were so sincere, I agreed for them to put a slice on my plate, but asked for them not to make a sandwich from it just in case I didn't like it (of course I was planning on HATING it!) I sat down with my husband and tore a corner off of the bread.  I couldn't believe what I was tasting!  I was GREAT!  It tasted homemade, was very dense and rich with flavor , I couldn't believe it was Gluten Free!  I immediately went up to the counter and asked if I could see the packaging.  There it was in big letters, Gluten-Free Rice Bread made by Food for Life.  As I was thanking the two girls who encouraged me to try the rice bread, tears actually came to my eyes and I became very emotional.  I explained that I have not had a "sandwich" in almost two years and I was thoroughly enjoying my rice bread.  They asked if I wanted another piece and said they would warm it up for me.  I sat at the table enjoying every single bite of my new found bread.  I have learned alot from this experience and I hope it helps others that have made similar decisions as I have. Perhaps it's because I've been so long without bread that it tasted so great, but so what!  I'm a sandwich eater again!!
