 I was under the understanding that May was "National Digestive Diseases Month" which was why some peopl chose to raise awareness then, and take advantage of that to do the Celiac focus then also.

Here is a government (CDC) site on National Health Observances  that states the same re: May-National Digestive Disease Month, and October - Celiac Awareness month.
