Hello Everyone
I am having a great week with new recipes. I made this one yesterday and just loved it.
It is difficult to get a casserole that is not full of calories and milk products. I
hope you like it.
Broccoli Casserole
1/2 carrot sliced
1/2 onion diced
1 cup water
1 tsp salt
16 oz frozen chopped broccoli
4 oz firm tofu
1 Tbsp lemon juice
pinch of garlic
1 cup uncooked instant rice
10 oz sliced mushrooms
3/4 cup water
Bring first 4 ingredients to a boil. Cover and simmer 10 minutes. Thaw broccoli. When
mix is ready pour into blender with the next four ingredients. Process until it is a
liquid (add the 3/4 cup of water at this point if you need to) Pour into greased
casserole dish. Add the rice, mushrooms and water. Stir to combine. Bake in a 350
degree oven for 40 minutes. Enjoy!
