I started eating paleo a year ago. I had bloodwork done before starting and
again just recently a year later. After eating 2 eggs a day every day all
year, my triglyceride and cholesterol levels went down. (triglycerides 31/
cholesterol 171)
My HDL & LDL ratio is also excellent and had improved. Now sometimes I'm not
very hungry at 6 or 7 am so I wait til I feel hungry which is about 10:30 and
then my "breakfast" is usually a chicken breast with avocado and salsa.
